Chicory Brussels Witloof has large, thick-stemmed leaves; stalks and leaves help create crisp winter salads. Alternatively, grill whole in butter for 10 minutes and add pepper and nutmeg... now that's a home grown classic!

SOW:   May-June, thinning to around 20cm between seedlings.

HARVEST:  October to December

WHERE TO SOW:

Sow directly into the soil outside at a depth of 1.5cm and cover with fine soil. Water well if soil is dry. Space the rows 30cm apart. When seedlings are 2cm high, thin them to 20cm apart.

Tips: Trim off the leaves and store in a frost-free place. When required for forcing, place several in a large pot, exclude light, and force at room temperature for around 3-4 weeks until ready. This will produce the delicate winter luxury, the Chicon.
