Sprouting Seed Mung Beans
Mung Beans crisp and juicy bean sprouts, and essential ingredient for healthy stir fries. Also great in salads and sandwiches within 4-6 days.

Where To Sow: Place seeds in a sieve and run under gentle cold water. Then soak the seeds overnight in a bowl of water. The next day, drain in a sieve again and get rid of excess water. Then fill jam jars about 1/4 full of seeds. Once the seeds sprout they should eventually almost fill the jar. Cover the top of the jar with a piece of cloth held down with elastic band. The jar must be able the "breathe".
What To Do Next: Place the jar in an airing cupboard, and rinse daily with fresh water. Ideally the seeds should be kept in the dark at a temp between 15 and 25 ºC, but they will also germinate just fine on the kitchen windowsill. Once the seeds have germinated, keep on a window sill and harvest when shoots are 3-4cm long.
Handy Tip: Keep in a warm place and repeat the wetting and draining twice a day.
Nutritional Value: Rich in potassium, iron, vitamins A, C and E and high in Amino Acids.
